Being vegan often means packing your own lunch, but since the weather has been so nice, I’ve been dying to make this salad! Spinach, cucumber, strawberries, vegan miyokoscreamery mozzarella, pistachios, and homemade croutons, topped with a homemade balsamic vinaigrette! It was supposed to be strawberry flavored, but the preserves never thinned out and incorporated into the dressing either way, still a super delicious, refreshing lunch!
(And don’t worry about the plastic, I reuse all of it!)
